Cooking method:

Prepare the filling. Peel the apples and remove the core. Grate on a large grater. Put the apples into a bowl. Sprinkle with lemon juice. Add starch, brown sugar and cinnamon. Mix well. Heat the apples in the microwave in pulses, stirring constantly, until lightly gelatinous. Then cool completely.

Prepare the dough. Sift flour and powdered sugar through a sieve. Add salt and stir with a whisk to combine all ingredients. Cut cold butter into small pieces. Pour the butter into the flour. Mash into crumbs with a fork (you can use your hands). From the total mass, set aside 70 grams of crumbs in a bowl for sprinkling the pie. Enter 2 yolks into the rest of the mass. Knead soft dough. Cover the bottom of a detachable form (d-20 cm) with baking paper.

Lay out the dough. Distribute it in shape, creating bumpers. Poke holes with a fork and refrigerate. If your kitchen is warm, put the crumbs in the refrigerator too. Beat egg whites and a pinch of salt with a mixer until light foam. While continuing to beat, gradually add the sugar. Beat until strong peaks. Assemble the pie. Remove the form with the dough from the refrigerator, lay out the apple filling in an even layer.

Put airy meringue on the filling, distributing it over the entire surface. Sprinkle the top of the cake with crumbs. Send the pie to a preheated (t -180) oven. Bake 35-40 minutes. Bake the cake open for the first 20 minutes, then cover with foil so that the sand crumb does not burn too much. After the time has elapsed, cool the cake in the oven with the door open.
