I do not indicate the amount of viburnum and sugar intentionally, since everyone has a different taste perception, since initially I made jam with viburnum and took a part from it. Focus on your taste, someone likes more or less toppings.
Almost any pie starts with dough, and this time it is prepared very quickly and simply. Dissolve yeast, salt and sugar in warm water (about 30 degrees), add vegetable oil and start with 2 cups of flour. Next, we introduce half a glass of flour and look at the consistency: we need a soft and elastic dough, softer than dumplings. Do not knead the dough for a long time, so as not to lose the crumbly structure. Approximately it will take plus / minus 4 cups of flour, depending on its quality.
Next, cover the dough and put it in the refrigerator for 1-1.5 hours, do not be alarmed. Yeast dough in this case can be cleaned in the refrigerator.
Let's get to the stuffing. As mentioned above, I took viburnum jam. Pour viburnum with sugar, crush a little so that the juice comes out and leave for several hours. We set it to heat up, after boiling we simmer over low heat under the lid for 20-30 minutes and squeeze the juice again. Then we pass the viburnum through a sieve, eliminating the seeds. The dimensions of my form are 37x25x5 cm.
We heat the pitted viburnum, mix 3 tablespoons of starch and 100 ml of cold water in a separate container. Pour starch into a boiling viburnum in a thin stream and let it boil for a couple of minutes. He must thicken. Refrigerate the filling.
Roll out the base of the pie to a thickness of approximately 5 mm and transfer it to the mold, smooth it out. Cut the apple into thin slices. Lubricate the base of the pie with jam and lay out the apple. Decorate the top of the pie with a lattice of dough: cut into strips and lay on top. Cut off excess dough with scissors. Brush with egg if desired.
We send the cake to bake in a preheated oven to 190 degrees until cooked. It took me 40-45 minutes in an electric oven with the middle position of the baking sheet. It is advisable to remove the cake from the mold after baking so that the bottom does not get wet. We cool the pie with viburnum and you can drink tea! Bon Appetit!
