Chicken thighs stewed with vegetables

Ingredients: chicken drumsticks, medium onions, medium carrots, large bell peppers, medium tomatoes, salt, pepper (you can add any favorite spices), dill, parsley (you can add any of your favorite), vegetable oil for frying, tomato paste (according to wish)

Cooking method:

Prepare the chicken thighs. Defrost, remove the joints, wash, dry.

Wash vegetables, dry, peel, remove seeds from peppers, and tips from tomatoes. We cut randomly. Onions in a medium cube, carrots and bell peppers in strips, tomatoes are not very large slices.

Put the drumsticks in a well-heated pan with vegetable oil with high sides and quickly fry. At this stage, I add them a little and add a little ground pepper.

When the drumsticks are fried on all sides, reduce the heat to medium and add the vegetables. First onions and carrots. Then bell pepper. Tomatoes last.

If the vegetables have not given enough liquid or it has evaporated, you can add a little warm water.

We stew our vegetables until tender. Salt, pepper and, if desired, add tomato paste.

Already in the finished dish, add fresh or frozen greens, let it brew a little under the lid and serve. Rice, potatoes or buckwheat are perfect as a side dish. But you can also serve it with pasta.
