I stayed with friends in St. Petersburg and tasted the most delicious salmon soup there! This is now my favorite soup. I generally love fish in any form and can eat it every day. Only now it is not always affordable for a pensioner, unfortunately.
Ingredients: salmon trimmings (for a 3 liter pan), potatoes, onion, carrots, large tomato (I only had 5 cherry tomatoes), cream 10%, Greens, Salt, spices
Cooking method:
Fry onion and half a carrot in vegetable oil (a little oil).
Transfer to a saucepan and pour water (I have 2 liters of boiling water), put on fire.
Cut the salmon trim into pieces and throw into the pan.
Cut the potatoes into cubes and also send to the pan.
Pour boiling water over the tomatoes and remove the skin, cut into pieces. Shred the other half of the carrot. Send the vegetables to the pan, pour in a little water and simmer over low heat until the water evaporates.
When the potatoes are cooked (after 15 minutes), pour in the cream.
We are waiting for it to boil, and put the roasted tomatoes and carrots into the soup. Salt, add spices to taste. We turn off the fire.
Finely chop the greens (I have onions and dill) and add to the soup. When the soup is a little infused (30-40 minutes), you can eat! :) Bon appetit!
