Ingredients: Milk, Water, Sugar, Fresh pressed yeast, Salt, Egg, Vegetable oil, Butter, Wheat flour, Baking powder, Minced meat (pork + beef), Onion (large head), Suneli hops, Pepper mixture, Coriander

Cooking method:

To prepare the dough, pour 125 milliliters of warm milk, 125 milliliters of warm water into a large bowl, then pour 1 tablespoon into a bowl sugar, add 18 grams of fresh pressed yeast to it and mix, after which we put 3-4 tablespoons of wheat flour from the total masses.

Mix all the ingredients well in a bowl with each other and set it aside to activate the yeast for 15-20 minutes. We break 1 chicken egg into a small bowl, then pour 2/3 teaspoon of salt into it and well beat with a whisk until smooth, then pour into a bowl with dough and mix between yourself.

We spread half of 350 grams of pre-sifted premium wheat flour in a bowl with dough, then add 1 teaspoon of baking powder to it and mix all the ingredients together and knead dough. Pour the remaining flour into a common bowl, put 30 grams of softened butter into it and continue carefully knead the dough with your hands for 10 minutes, then grease the dough with 1 tablespoon of vegetable oil and put the bowl in a warm place for 1 hour.

To prepare the filling, put 450-500 grams of mixed minced meat into a dry frying pan and put it on the stove, then mix and fry the minced meat for 10 minutes on a high heat of the stove. Finely chop 1 large head of onion and put it in a pan, then mix the onion with minced meat and fry the stove over high heat until the onion is transparent.

Add 2/3 teaspoon salt, 1/2 teaspoon suneli hops, 1/3 teaspoon pepper mixture, 1/3 teaspoon coriander and mix all the ingredients well, then switch the stove to minimum heat and cover the pan with a lid and simmer the minced meat with spices 10 minutes. We spread the minced meat in a deep bowl and cool, then add well-whipped protein from 1 chicken egg to the bowl and mix all the ingredients together.

We spread the dough on a table greased with vegetable oil and knead, then divide it into 12 identical parts and sculpt koloboks from them, which we put on the table and covering the top with a towel, let it rise for 20 minutes, after which we stretch the koloboks to flat cakes and put 1 tablespoon of cooked meat on them fillings. We blind the edges of the cakes with the filling and form pies, which are then laid out on a baking sheet covered with parchment and put on proofing.

Lubricate the spaced pies with beaten egg yolk with 2 tablespoons of warm milk, then put the baking sheet in a preheated to 160 degrees oven and bake pies for 15-20 minutes, after which we take out the baking sheet from the oven and spread the cooked meat pies on plate. Bon appetit, dear friends!
