#pie Today I will cook cabbage kefir pie. It can be called “lazy” because it is easier and faster to prepare such a pie than regular pies with filling. I will need fresh cabbage, flour, eggs, kefir, salt, soda and spices.
Ingredients: fresh cabbage, eggs, kefir (natural yogurt), flour, butter, salt, soda (baking powder), optionally in the filling: boiled eggs, fresh herbs, spices to taste (nutmeg walnut, cumin)
Cooking method:
I'll start with cabbage. I have already prepared it, because yesterday I cooked cabbage rolls. I chopped the rest of the cabbage, placed it in a cup, covered it with cling film and stored it in this form in the refrigerator. Under the film, cabbage is perfectly stored for 1, 2, 3 days. Doesn't fade, doesn't dry out. She perfectly retains her qualities. I will salt the cabbage and add spices.
Spices are not a mandatory ingredient, they are added to taste and desire. A little nutmeg - on the tip of a spoon. Also cumin seeds. Cabbage with cumin goes well together, it turns out tasty and fragrant.
I will crush the cabbage a little with my hand. At the same time, it loses its volume, gives juice, becomes softer. At the same time, salt and spices are distributed over it. The recipes indicate 400-500 gr. cabbage. For the filling, only one cabbage is enough. In this case, 500 gr. But you can add additional ingredients to it. For example, boiled eggs or a bunch of fresh herbs. In this case, cabbage can be put 400 gr. I will use both. I crumbled two eggs, chopped a bunch of greens.
Greens can be used differently. I will put to sleep.
I will mix. The filling is ready.
Now I will put a cup of butter on the stove so that it dissolves. At this time, I will prepare the form. From parchment, I cut out a circle with a diameter according to the size of the form and grease it with vegetable oil. Pour a little oil, spread on parchment. You can do without parchment paper. It will be enough just to grease the bottom of the mold well with oil. But in addition, you can still sprinkle with a thin layer of flour or breadcrumbs.
The butter has melted and it's time to start preparing the dough. But first, I turn on the oven to 180 degrees so that it warms up.
I sifted the flour and cracked the eggs into a bowl. If the eggs are small, then 3 pieces can be used. If large, then 2 will be enough. Kefir can be taken out of the refrigerator in advance so that it reaches room temperature. I will beat the eggs with a fork, pour kefir, add salt, soda and mix again, then I will gradually add the sifted flour. The mixed dough should turn out like pancakes. Add melted butter and mix again.
I will pour part of the dough into the mold - about one third. This will be the bottom of the pie.
I spread the dough so that it evenly covers the bottom of the mold.
I'll put the stuffing on top. I level it so that the layer is the same thickness.
And top with the remaining dough. The dough must be spread so that it completely covers the top of the cake. And that everything was closed on the sides too. I put the cake in a preheated oven to bake at a temperature of 180 degrees.
The cake will bake for 40-45 minutes. I took out the slightly cooled cake from the mold. You can turn it upside down, remove the parchment and then put it on a plate.
The pie is served warm, but it remains delicious when cold. Therefore, such pastries can be taken to the country, to nature, to a picnic. Good appetite!
