I used to have this problem: as soon as you open the tomato paste, mold soon appears in the jar. And you have to throw it away, although there is still a lot of pasta.
I always buy small jars of tomato paste, I take it only with a clean spoon, I store it in the refrigerator, but nevertheless it always spoiled with me. You open a jar, use it 1-2 times, and then mold appears.
But now I don't have that problem.
I was going through old magazines one day and found advice on storing tomato paste. It turns out that as soon as you open a new jar, you need to smear the lid with mustard from the inside.
Mustard is an excellent remedy against fungi, bacteria, etc., so there will be no mold, and tomato paste will be perfectly preserved.
I don’t often use tomato paste for cooking, but I have a small jar for 2-3 months until the paste is completely gone.
