The first step is to knead the dough for the noodles. The dough should be very tight, then the noodles will be elastic and will not boil soft. Whisk eggs and salt with a fork until smooth. Gradually add flour and start kneading the dough. I did all this not by hand, but at the very end I took it out and kneaded it with my hands. Put in the refrigerator for at least two hours.
Now we cook chicken broth, from homemade chicken it turns out straight yellow and fragrant! I always cook on the second and carefully remove the foam so that the broth is as transparent as possible!
Now let's start rolling out the noodles. I have an assistant, she rolls and cuts into identical strips. If there is no such shaitan-machine, it does not matter. You roll out a small piece of dough into a layer, fold it into a tourniquet and cut as thinly as possible obliquely. After that, carefully divide everything into strips and leave to dry for five minutes. That's what my grandmother did. When cutting, add flour so that the strips do not stick together.
The broth is ready, salted, lavrushka is added, you can also add allspice with peas. Now we throw in the noodles. It is necessary to constantly stir the broth and in parallel add the noodles. Before that, remove flour from the noodles to the maximum. Add all the noodles and cook after boiling for two minutes. Turn off the fire and you're done!
