Pastroma is a dish of the Jewish cuisine of Bessarabia and Romania, probably of Turkic origin. It is a meat delicacy, originally from beef or pork. It is also prepared from chicken or turkey breast: the meat is marinated, seasoned with spices and baked. As a result, seemingly dry meat turns out to be juicy and fragrant.
Ingredients: chicken breasts, milk, salt, chicken seasoning, paprika, garlic cloves, salt, mustard, olive oil
Cooking method:
Soak chicken breasts in milk with salt and refrigerate for 2-3 hours. Meanwhile, prepare the marinade: mix the chicken seasoning, paprika, salt, olive oil, mustard and crushed garlic.
Dry two breasts, fold with a jack and tie with food thread. Brush with marinade. Leave to marinate for at least 2 hours, preferably overnight. Next, send the breast to the oven preheated to 200 degrees for 25 minutes.
Then turn off the oven and leave the chicken breast inside until the oven cools down completely (do not open the oven door). Serve pastrami cut into thin (or not so) slices.
