Hello friends! All the production of factory-made products at home appears for well-known reasons: the lack of a product in the store, the high price and the presence of various E-additives. In this regard, I should note that the final product is not always cheaper. The only reassurance is that it is a product of your hands and cannot be worse than the default store. I really like Philadelphia cheese, but it's expensive and not always available in the store. So I learned to make it myself.

Philadelphia cheese at home
I tried to make cheese in two versions and I liked the first one, with natural yogurt, more. If yogurt is not available, it can be replaced with fatty kefir. Sour cream in both cases should be at least 20% fat.
Option 1
- 500 g natural yoghurt
- 250 g fat sour cream
- salt, sugar, lemon juice
Option 2
- 400 g kefir
- 350 g fat sour cream
- salt, sugar
✔️ I do everything through freezing to get cream cheese faster. Basically, this mass may not freeze, but then for weighing you will need a denser fabric and the process will take 2-3 days.
✔️ I immediately mix yogurt with sour cream (or kefir with sour cream), close the lid and put it in the freezer until completely frozen.
After freezing
✔️ I take a deep bowl, a sieve and 4 layers of gauze.
✔️ I put it in a bowl, cover with gauze.
✔️ Waiting for defrosting, tying and hanging.
✔️ After complete defrosting, the mass hangs for about 12 hours.
The output is 290 - 300 g of cream cheese.
In the finished cheese, I add a pinch of salt (1/4 tsp), sugar (1/2 tsp) and lemon juice (1/2 tsp) and mix everything.
✅ As a result, I get a very tasty Philadelphia cream cheese at home!
Do not discard the strained liquid, you can use it to make pancakes or yeast dough.
