Peas are a storehouse of vitamins, protein, trace elements. Therefore, pea soup is extremely healthy.
Making a delicious pea soup is not at all difficult. This is a very affordable first course.
There are many recipes for making pea soup.
But I want to share with you my favorite option. This is a pea soup with veal ribs broth.
This pea soup is not too greasy, incredibly fragrant and very tasty.
And I prefer to grind the peas in the soup with a blender. So pea soup becomes tender and velvety in taste.
Ingredients:
- water - 3 l
- veal ribs (pork) - 300 g
- peas - 300 g
- potatoes - 300 g
- onion - 1 pc.
- carrots - 1 pc.
- parsnip root - 1 pc.
- salt - 1/2 tbsp. l.
- ground black pepper - to taste
- bay leaf - 1 pc.
Step by step recipe
1. We put 0.5 kg of ribs in a 4-liter saucepan and pour water so that it covers them.
I use veal ribs, but you can also use beef or pork. We put the pot on fire.
Immediately, as soon as the water boils and foam forms, remove it from the heat.
Drain the water and rinse the pot and meat.
2. Pour about 3 liters of water into a saucepan with meat. We put on fire. After boiling water, cook for 10 minutes, and then pour 300 g of well-washed peas here. Pre-peas, you can soak in water for a couple of hours, so it boils faster.
I also use parsnip root, but you can put any roots or a whole onion. Cook the ribs with peas on the smallest fire for about 1 hour.
3. While everything is cooking prepare the rest of the ingredients.
300 g potatoes cut into small cubes.
Three carrots on a fine grater.
Cut one onion into cubes.
4. Put the chopped onion in a frying pan with a little vegetable oil. Fry until golden.
When the onion is golden, add the grated carrots.
Mix everything and sauté for another 1-2 minutes. We remove the passerovka from the fire.
5. 1 hour has passed.
We take out the parsnips, we will no longer need it and take out the ribs, they need to be allowed to cool slightly.
6. Grind the boiled peas with an immersion blender directly in the pan until smooth.
Do this very carefully, as you can burn yourself. If you like more whole peas, then do not chop.
7. Add the diced potatoes to the pot with the peas.
Mix everything and cook for about 10 minutes.
8. The ribs are a little cold. Separate the meat from them and cut it into smaller pieces.
Soup with potatoes has been boiled for 10 minutes, add chopped meat to it.
9. Salt with about half a tablespoon of salt. Pepper with black ground pepper. And add bay leaf.
We also put the cooked vegetable passerovka here. Mix everything and bring the soup to a boil.
When it boils, remove from fire.
Pea soup turned out very tasty and rich.
Easy to make and perfect for a family dinner.
