Ingredients: Flour, Butter, Sugar, Eggs, Vanilla Sugar, Baking Powder, Salt, Frozen Cherries, Powdered Sugar

Cooking method:

Remove the pitted cherries from the freezer, defrost at room temperature, squeeze lightly. Remove the butter from the refrigerator in advance so that it has time to soften at room temperature.

In a separate bowl, combine eggs with sugar and vanilla sugar. Instead of sugar, you can add a sweetener that is not afraid of heat treatment. Vanillin sugar can be replaced with vanilla (at the tip of a knife), but be careful with its dosage, if you overdo it, the taste of baking will be bitter.

Beat the egg mixture with a mixer until fluffy.

Add soft butter. Continue beating until smooth.

Salt the dough. To better distribute the baking powder over the dough, mix it first with a small amount of flour, and then add it to the bulk. Stir.

You may need more or less flour than indicated, as its properties may vary, so add it in parts, and not all at once. Focus on the desired thick consistency of the dough.

Beat the dough. It should turn out quite viscous, homogeneous.

Take a heat-resistant baking dish with high sides (diameter 25 * 25 cm). Line it with parchment. Put the dough into it and smooth its surface with a culinary silicone brush.

Arrange cherries evenly on top. In advance (10-15 minutes before cooking), preheat the oven to 180 degrees. Bake the pie for about 45 minutes. Pierce the pastry with a wooden skewer, if it comes out dry, then you can take it out. Remove pastry from oven, cool slightly. Sprinkle with powdered sugar. Before serving, cut into portioned squares.
