#vegan A good version of semolina bread. If suddenly you didn’t have flour, you can bake it with semolina. I used semolina durum wheat (grade T), it is called semolina. You can use the usual variety M. My bread turned out crispy.
Ingredients: semolina (I have grade T, semolina), warm water (38-40 ° C), dry yeast, sugar, salt, vegetable oil
Cooking method:
Activate the yeast: Pour all the water into a large and wide bowl. It should be warm (about 38-40°C). Pour sugar, dissolve it in water, stirring with a whisk. Add yeast and mix. Cover the container with a towel and leave for about 10 minutes until a “cap” forms and the mass becomes frothy.
When the yeast is activated, add salt, pour in oil and mix. Gradually add semolina, first stirring with a whisk, then with a spoon. It took me 450 g.
As a result, the dough turned out thick, as in the last video:
Put the dough into the same bowl where it was kneaded. Leave to rise in a warm place for 1.5-2 hours (I have it near the battery).
Then the dough needs to be stirred a little with a spoon and put in a baking dish for 40 minutes so that the dough rises. If your form is not silicone, grease it a little with vegetable oil and sprinkle with semolina if desired. I baked in silicone, but still decided to grease and sprinkle with semolina.
Bake in a preheated oven at 190°C for 35 minutes until golden brown. It is better to immediately pull out the finished bread from the mold if you baked in silicone so that it does not get wet.
Place it on the grill, covered with a towel. Both the bottom and top crust of the bread turned out crispy. The bread itself is yellowish in color.
