Ingredients: long-cooked oatmeal (or oatmeal), rice flour, Jerusalem artichoke syrup/agave syrup/honey/powdered sugar to taste, coconut milk, water, salt, soda + a little lemon juice
Cooking method:
If you use oatmeal, then you need to beat them in a coffee grinder into flour. You can use gluten-free oatmeal, as well as ready-made oatmeal.
In a bowl, mix 2 types of flour, salt and soda.
Pour in liquid ingredients and stir. I make my own coconut milk. I warmed it up a little from the fridge.
Let the dough stand for 5 minutes. The dough will thicken further as it cooks.
Bake the waffles in the waffle iron according to the instructions. If you do not have a waffle iron, then you can make pancakes from this dough by cooking them in a pan.
Optionally, you can serve with syrup, honey, jam, jam, bananas, any urbech, peanut butter, sour cream, yogurt, cottage cheese or sprinkle with powdered sugar.
After baking, waffles should be crispy and soft inside. And when they lie down, they become completely soft. I made waffles in the evening and had them for breakfast in the morning and they were very soft.
