Apple Marshmallow with Cinnamon

Ingredients: sugar, applesauce, protein, water, agar-agar (1200 gel strength), cinnamon, salt, citric acid

Cooking method:

To prepare applesauce, take 300-350 g of apples, peel and core them, cut into medium cubes. Transfer the apples to a saucepan and add the cinnamon. We put the stewpan with apples on a small fire to languish under the lid. When the apples soften and boil, boil them for about 10 minutes, after that we interrupt them with a blender in mashed potatoes and let them cool.

In the bowl of a mixer, we shift the applesauce, protein and salt. We start beating at high speed.

Put sugar, water and agar-agar in a saucepan. We put on medium fire. When the syrup begins to bubble (at about 100 degrees), add citric acid to the syrup and cook to 118 degrees, stirring constantly.

Pour the prepared hot syrup in a thin stream into the protein with applesauce, continuing to beat the mass at high speed. Whisk until stiff peaks form, about 4-5 minutes.

Lay down a silicone mat. We transfer the finished mass into a pastry bag with the desired nozzle and deposit the halves of the future marshmallow. * To work with the finished marshmallow mass, a temperature of about 40 degrees is needed, then it remains mobile. The bowl can be put in the oven for heating and continue to work with the formation of marshmallows.

We leave the marshmallow halves to stabilize and dry for 12-24 hours, after which we connect the halves and sprinkle with powdered sugar. * To make marshmallows a little less sweet, you can sprinkle with powdered sugar and corn starch in equal proportions.
