This collection of recipes is especially for mushroom lovers. It contains four recipes with champignons at once. These are awesome baked mushrooms in the oven, fragrant soup with champignons and minced meat, delicious mackerel rolls with mushroom filling and an amazing pancake pie with champignons. All recipes are simple and prepared from available products. They are perfect for the daily menu, and some of them will not be superfluous on the festive table. Baked champignons in the oven

Ingredients:

  • champignons (large or medium) - 1 kg
  • butter - 70 g
  • lemon juice - 2 tbsp. l.
  • vegetable oil - 1 tbsp. l.
  • dried garlic - 1 tsp l.
  • salt - 1 tsp. l.
  • parsley - a small bunch

Step by step cooking recipe:

  1. Let's prepare the dressing first. In melted butter, add a teaspoon with a small slide of salt and a teaspoon of dried garlic. We mix everything.
  2. Pour well-washed champignons into a large bowl and pour prepared dressing over them. Mix everything with your hands, so that each mushroom is evenly coated with dressing.
  3. Grease a large baking dish or oven tray with vegetable oil. Put the prepared mushrooms in the form with the legs up. We put everything in the oven preheated to 200 degrees. on the up + down mode without convection. Bake for approximately 30 minutes.
  4. We transfer the finished mushrooms to a plate for serving, sprinkle with chopped parsley on top and pour over lemon juice.
  5. Mushrooms in the oven are juicy and tasty, both hot and cold.

Soup with mushrooms and minced meat

Ingredients:

  • water - 3 l
  • minced meat - 400 g
  • champignons - 300 g
  • potatoes - 300 g
  • carrots - 1 pc.
  • onion - 1 pc.
  • tomato - 1 pc.
  • rice - 1/2 tbsp.
  • greens - a small bunch
  • salt - 1 tbsp. l.
  • ground black pepper - to taste
  • bay leaf - 1 pc.

Step by step cooking recipe:

  1. Fry minced meat in a small amount of vegetable oil for about 3-4 minutes.
  2. Put the fried minced meat in a 4-liter saucepan, add the diced potatoes and pour half a glass of washed rice. We fill everything with water and put it on the stove. After boiling, remove the foam from the surface of the soup and cook the soup over low heat for about 15 minutes.
  3. Cut mushrooms into slices. If the mushrooms are small, then you can cut into quarters. Fry the chopped mushrooms in a dry frying pan over high heat until all the liquid has evaporated, and then fry a little more.
  4. Transfer the cooked mushrooms to the bowl with the soup. We cook everything until the potatoes and rice are ready for about 10 more minutes.
  5. Cooking vegetable sauté. Onion cut into small cubes. Three carrots on a fine grater. Cut one tomato into small cubes. In a frying pan with a little vegetable oil, saute the onion until golden. Add grated carrots here and sauté for another 2-3 minutes. Add the chopped tomatoes to the vegetables and cook for about 2 more minutes.
  6. In the already almost ready soup, add vegetable sauté, salt to taste, pepper and put the bay leaf. Mix everything and cook for another 2-3 minutes.
  7. Finely chop a bunch of greens, I have green onions, put in soup, cover with a lid and remove from heat.
  8. Soup with mushrooms and minced meat turned out to be very fragrant, satisfying and tasty.

Mackerel rolls with mushroom filling

Ingredients:

  • fresh-frozen mackerel (small) - 2 pcs.
  • champignons - 150 g
  • cheese - 80 g
  • garlic - 2 cloves
  • salt - to taste
  • ground black pepper - to taste
  • vegetable oil - for frying

Step by step cooking recipe:

  1. Already gutted from the insides and well-washed mackerel carcasses of small sizes, cut along the ridge. Gently remove the fillet with your hands on one side of the ridge, separating the bones. Cut off the fillet near the tail with a knife. We also cut off all the fins with a knife along with the bones. The small bones that remain are removed by hand. We do the same with the second half of the fillet. Salt the prepared fish fillet to taste.
  2. Three mushrooms on a coarse grater and put them in a dry, heated frying pan. Fry over high heat until the liquid evaporates, and then pour in a little vegetable oil and fry for a few more minutes.
  3. Three cheese on a coarse grater. Mix the already slightly cooled mushrooms and grated cheese. Here we squeeze 2 cloves of garlic through a press, salt to taste and pepper. We mix the filling.
  4. We put the mackerel fillet skin down, and put the prepared filling on top. We do not put the filling from the side of the head, so that it does not fall out when rolling into a roll. We roll the rolls, starting from the tail. You should get four rolls.
  5. We shift the mackerel rolls into a baking dish, greased with vegetable oil. We put everything in a preheated oven to 180 degrees. Bake for approximately 25 minutes.
  6. Mackerel rolls turned out very tasty, fragrant and beautiful.

Pancake pie with mushrooms

Ingredients:

Pancakes:

  • milk - 750 ml
  • flour - 300 g
  • eggs - 2 pcs.
  • vegetable oil - 2 tbsp. l.
  • sugar - 1 tbsp. l.
  • salt - 1/2 tsp. l.

Filling:

  • champignons - 600 g
  • cream 10% - 200 ml
  • onion - 1 pc.
  • flour - 1 tbsp. l.
  • salt - to taste
  • ground black pepper - to taste

Fill:

  • eggs - 3 pcs.
  • milk - 150 ml

Step by step cooking recipe:

  1. First, prepare the dough for pancakes. Break eggs into a bowl, pour sugar and 0.5 tsp. l. salt. Beat everything with a mixer until light foam. First, add about 300 ml of warm milk to the bowl and mix gently at low speed of the mixer or with a whisk by hand so that the batter does not splatter. Pour flour here and mix the dough at low speed until smooth.
    Pour the remaining 450 ml of warm milk and mix the dough again until smooth. Add about 2 tbsp. vegetable oil and mix well. Let the dough rest on the table for 15 minutes.
  2. While the dough is infused, prepare the mushroom filling for pancakes. Cut a large onion into quarter rings. Cut mushrooms into slices. We fry the mushrooms in a dry hot frying pan over the highest heat until all the liquid has evaporated. Then pour a little vegetable oil into the pan and put the chopped onion. Saute everything until the onions are done. Salt and pepper mushrooms to taste.
  3. Sprinkle 1 tbsp over the mushrooms. l. with a slide of flour and mix well. Here we pour 200 ml of cream with a fat content of 10-15%. Mix everything until the cream thickens. The filling is ready, remove it from the heat and leave to cool.
  4. We bake pancakes. Before the first pancake, grease the pan with a little vegetable oil. We take about half a ladle of dough and pour it into the pan, distributing it throughout the pan. We fry pancakes on a fire slightly less than average. When the pancake is browned on one side, flip it over to the other side. So we fry all the pancakes. From this amount of dough, I got 25 pancakes in a pan with a diameter of 24 cm.
  5. We make pancakes. On the pancake lay out on one side about 2 tbsp. l. mushroom filling and roll it into a tube. I had enough filling for 8 pancakes.
  6. Lubricate the baking dish with butter. Put stuffed pancakes in it in a circle. For a form with a diameter of 22 cm, it took 8 stuffed pancakes. If your form is larger than mine, then the number of stuffed pancakes can be increased by putting a little less stuffing in them.
  7. Preparing the filling for the casserole. Break 3 eggs into a bowl and pour 150 ml of milk, add salt and pepper to taste. Stir with a whisk until smooth, without beating.
  8. Pour the prepared filling onto the pancakes in the form. Top everything with grated cheese.
  9. We put in the oven, preheated to 180 degrees. Bake for approximately 35 minutes.
  10. Pancake pie with mushrooms turned out very tasty and satisfying.
