This recipe was shared with me by a mom. I cooked it for my son's birthday, for a year🤗 the cake turned out great, tasty, well soaked. Moreover, you can experiment with the ingredients (for example, put a pumpkin instead of carrots, or add nuts) 😊 be sure to try cooking, both adults and children will appreciate it.
Ingredients: For cakes, medium carrots, flour (I have whole grain), dates, poppy seeds, eggs, baking powder, as the dough is heavy, vanillin, olive oil (vegetable), Cream 1, cottage cheese 2% (any fat content is possible), sour cream, Impregnation of cakes, Milk (I have 2.5% fat content), Cream 2, Cream 33%, Curd cheese, Layer, Bananas
Cooking method:
We clean the carrots and three on a coarse grater.
Soak dates in boiling water for 5 minutes. Remove the bones and pass through a blender or meat grinder. Can be thoroughly mashed with a fork.
Separate the yolks from the whites. Add dates, poppy seeds, oil to the yolks, pierce with a blender.
Then add carrots, sifted flour, baking powder, vanillin to this mixture. We mix everything thoroughly.
Beat egg whites to peaks, combine with our mixture, mix gently.
We cover the baking sheet with parchment, evenly distribute the dough and bake our cake in an oven preheated to 180 degrees for 20-25 minutes.
Let the cake cool and cut into 4 equal pieces.
Cream 1: beat cottage cheese and sour cream.
Layer: cut bananas into half rings.
Cream 2: Whip the cream, add curd cheese, beat again.
Assembling the cake 🎂: Cake-impregnation (evenly pour 2-3 tbsp. spoons of milk) - cream 1🧁 - bananas and so on.
Lubricate the topmost cake and sides of the cake with cream 2 (half cooked). And we send it together with the remaining half of cream 2 to the refrigerator to soak overnight.
During the night, the cream will soak the cakes well, you will need to grease the cake and sides again with the rest of the cream 2 and decorate as you like (berries, cookies, chocolate, etc.) 🎂😊🧁.
