The dish got its strange name "Bread and Butter" from the authors - the Fanning couple - who grew cucumbers on their farm. In hard times, farmers pickled cucumbers in this way and exchanged them for food - bread and butter - in a store nearby.
Ingredients: cucumber, salt, onion, sugar, vinegar 9%, apple cider vinegar, brown sugar, mustard seed, celery seed, turmeric
Cooking method:
Cucumbers cut into circles of 3-5 mm. Put in a large bowl and cover with all the salt - 1½ tablespoons. Stir, cover with cling film and leave for 1½ hours in the refrigerator. Then put the cucumbers in a colander and rinse with cold water. Return back to bowl.
Onion cut into thin feathers. Pour over cucumbers and stir.
Pour all the vinegar into a ladle, add all the sugar, mustard seeds, celery and turmeric. Bring to a boil on the stove, stirring until the sugar dissolves. Remove from heat, wait until the boil stops and pour hot marinade over cucumbers. Stir and leave to cool for about 1 hour.
Cover cucumbers with clingfilm and refrigerate overnight.
Quick pickled cucumbers "Bread and Butter" are ready. Transfer to jars, close with lids and store in the refrigerator. Storage time - up to 1 month.
