Ingredients: cottage cheese, butter, flour (may need a little more or less), baking powder, salt, biscuit sugar, cinnamon for biscuit boning, vanilla sugar for biscuit boning
Cooking method:
In a bowl suitable for kneading the dough, put the cottage cheese and soft butter. We pierce everything with a submersible blender to get a homogeneous smooth mass (I was too lazy - I rubbed the mass with a fork, so I left lumps of cottage cheese).
Gradually add the sifted flour mixed with baking powder and salt. Quickly knead the dough with your hands. You do not need to knead for a long time: as soon as there is not a single flour lump left, the dough is ready. It turns out soft, tender and not sticky at all.
We put the finished dough in a plastic bag and send it to the refrigerator for 40 minutes. Prepare sugar for deboning cookies (total need +/- 80 g). When the dough rests and gluten develops in it, it will become very pliable and pleasant to work with. I divide the dough into 2 parts.
On a table sprinkled with flour, roll out the first part (I put the second part back in the refrigerator at this time) into a thin layer 2-3 mm thick. With the help of a ring, a special round cutting, a glass or a glass, we cut out circles with a diameter of 8-9 cm from the dough. We collect the scraps, knead, roll out and cut out again. Dip the dough pieces in sugar on one side.
Fold the circle in half with sugar in the middle. Dip the semicircle into sugar again and fold in half. The result is such a blank for the future curd cookies.
But after all, the cookies are called "Houndstooth", so for the sake of resemblance, we make two cuts on the round side with a knife. We do the same with the rest of the blanks. Transfer them to a baking sheet lined with parchment paper. I cooked on two baking sheets (one batch is baking, the second is waiting). Bake the cookies in a preheated oven at 200°C for about 20 minutes.
