Today I want to share a recipe for puff pastry. 5 years ago, I shared the recipe for this cry on my blog on YouTube, so as not to be unfounded, I made screenshots of reviews from those who prepared below. Read them and you will understand everything yourself. This is only a small part.
Dough:
- Flour - 500 gr.
- Milk - 170 ml.
- Raw yeast - 30 gr. (dry 10 gr)
- Sugar - 120 gr.
- Salt - 1/2 tsp
- Egg - 2 pcs.
- Egg yolk - 2 pcs.
- Butter - 60 gr.
Filling:
- Butter - 180 gr.
- Raisins - 150 gr.
- Walnut - 100 gr.
Glaze:
- Egg white - 2 pcs.
- Sugar - 125 gr.
The size of my forms is 10*8cm, 13*9cm, 15*10cm
COOKING METHOD
heat milk and add yeast
add sugar 1 tbsp. and 1 tbsp. flour
leave for 10 minutes
melt butter
Break 2 eggs and 2 yolks into a bowl, add sugar and beat
sift flour into a bowl, add salt
add dough
and beaten eggs with sugar
stir and add cooled melted butter
put on the table and knead with your hands for 10-15 minutes
at first the dough will stick to your hands, but you don’t need to add more flour (you can only grease your hands with vegetable oil)
For kneading, you can use a dough mixer or a mixer with a dough kneading attachment.
remove the dough to rise for 1 hour
divide the dough into parts (the dough should take up 1/3 of the form)
roll out the layer, grease with soft butter
sprinkle with nuts and raisins
wrapping the roll
cut into de parts, but not completely
we wrap
and put in the form
let rise and bake in the oven until cooked
