Today I will share a recipe for a very light salad in all respects. I was surprised when I saw it on the menu of a decent restaurant, although why not. Now everyone is watching the figure, and restaurant food does not have to be very intricate. The main thing is that it tastes good.

Light beetroot and cheese salad

So:

We only need a few ingredients:

- Boiled beetroot (I have been buying it in a package for a long time) -200g.

-Cheese or goat cheese-150 gr

- Pine nuts-50 gr.

-Olive oil

I wrote the approximate number of products used in the salad. it all depends on whether you are going to cook for yourself in portions for 1 time or make a large portion for the whole family ..

Cut the beets into fairly large pieces.

We cut the cheese a little smaller, but also quite large.

We combine the beets and feta cheese, put them in a salad bowl, and sprinkle with pine nuts on top, which were previously fried a little in a pan.

Pine nuts are not cheap, but this salad needs them.

And if you have a couple of leaves of arugula, then the salad will sparkle with completely different colors. I didn’t have arugula, but there was a regular leaf lettuce, which I added. Pour with olive oil. I do not salt, because cheese is salty, but if you want, everything is in your hands)

I can’t promise that men will be delighted with this dish (there is no meat or mayonnaise)), but if you are getting ready for spring and trying to get in shape, then this salad is definitely for you. And do not be afraid of high-calorie nuts, there are not so many of them. The taste is given, but the figure will not be spoiled.
