I don’t really diversify the table with beef. Tough and it takes a long time to cook. But when I saw such a piece, I could not resist and bought it. Having brought it home, she began to rummage in search of a good recipe, so that it would not be very “confusing” and troublesome, but at the same time, feasible. Found the Berliner Schmorbraten. The meat turned out very juicy and soft. What a complete surprise for me! Therefore, I wholeheartedly recommend trying this easy way to cook beef. #second courses #meat #beef #olgrigrecept #menu #hot #picnic
Ingredients: back part of meat, mustard, freshly ground pepper, Salt, Nutmeg (powder), Clove (powder) cloves for me are good only in mushrooms, so I missed this product), thyme (dried), ghee, celery and carrots, leeks, fresh parsley, onions, bay (I also have from Mila, from Italy, so vigorous that half is enough), lemon zest, fresh thyme (replaced with dried), white wine vinegar, Berlin White Beer (I used only half the bottle, not a full one), sugar (I didn’t use it at all), water (I used 100 ml), starch (I didn’t have time to make the sauce of their vegetables, that's why I didn't use it)
Cooking method:
With very few exceptions. But I give the original recipe, the deviations are in brackets. Once I found it, I had to buy beer))
Getting started: To begin with, we will clean the floor of the celery tuber and a couple of carrots. The beef stew in Berlin resembles a little marinated meat roast (Sauerbraten) due to the addition of beer. Who can not buy Berlin beer can use any LIGHT beer. First, turn on the oven to heat up to 200 gr C. Rinse the meat briefly under running water, wipe with paper towels. We mix our ingredients with mustard and coat our piece on all sides.
Melt the melted butter in a cast iron pot and fry the coated meat on all sides. (I did it separately in a frying pan)
Let's put the vegetables in the cast iron,
Add lemon zest, bay leaf.
Let's bring the meat back up. Add a couple of sprigs of fresh thyme (thyme), who does not have, add, like me, dried. Pour a spoonful of vinegar and one bottle of beer (I repeat - I added half a bottle and only 1 tsp of vinegar. I need to add sugar, but I did NOT add. It's up to you! Close our cast iron with a lid and put in the oven at 200 C for 1 hour. Put on the middle shelf.
After 30 minutes, I took out and filled the cast iron with peeled potatoes, salted it on top and again tightly closed the lid and sent it to the oven. The beer did NOT touch the potatoes. After another 30 minutes, I checked the readiness. The cat was ready. She closed the lid again and, turning off the oven, sent it back. In the meantime, she made a salad, boiled the prepared broccoli, set the table, took out a pot, took out the meat, cut it.
And we ate with appetite, which I wish you too!! Try it and enjoy your meal!!
