Awesome pie with cherries and streusel based on German cuisine. It is juicy, tender and perfect for summer tea drinking. This pie perfectly combines a tender and sweet base on curd dough and a pleasant sourness of cherries. Well, the streusel gives the cake an unusual look.
This cherry pie is easy to make. It is only important to observe some nuances. Of course, it is better to take fresh cherries for the pie, but frozen berries can also be used in winter.

Ingredients:

Pie base:

  • flour - 150 g
  • cottage cheese - 100 g
  • butter - 50 g
  • sugar - 50 g
  • eggs - 1 pc.
  • vanilla sugar - 8 g
  • baking powder - 5 g
  • salt - a pinch

Streusel (baby):

  • flour - 60 g
  • butter - 40 g
  • sugar - 40 g

Filling:

  • cherry (pitted) - 300 g
  • sugar - 2 tbsp. l.
  • starch (corn) - 1 tbsp. l.

Step by step recipe

1. Preparing the base for the pie.
Put 50g of butter at room temperature in a bowl. Pour 50 g of sugar, a pinch of salt and 8 g of vanilla sugar here. Beat everything with a mixer until the butter turns white.

2. To whipped butter, add 100 g of cottage cheese and 1 egg. Again, beat everything until smooth.

3. In a separate bowl, mix 150 g flour and 5 g baking powder for dough.

4. We introduce the flour mixture into the dough in 3 approaches, each time mixing until smooth. When the dough becomes thick, then continue to knead it with your hands.

5. Wrap the finished dough in cling film and put it in the refrigerator for 30 minutes.

6. Now let's get to the stuffing.
Remove pits from cherries. I do this with a large safety pin. So the bones are easily removed and the juice is not splashed.
We shift the pitted cherries into a sieve to drain excess juice. In total, you will need 300 g of pitted cherries.

7. Now we make the streusel for the pie.
Put 40 g of butter at room temperature in a bowl, pour 40 g of sugar and 60 g of flour.
Grind all the ingredients with your hands into crumbs.

8. The dough is already cold. We transfer it to the form. The bottom of the mold should be covered with parchment, and the sides should be greased with butter and sprinkled with flour.
We evenly distribute the dough in shape, making small bumpers at the edges. Prick the dough with a fork before baking.

9. We put the form with the dough in a preheated oven to 180 degrees. Bake for 15 minutes.

10. After 15 minutes, take the dough out of the oven and continue to prepare the filling.
Excess juice from the cherry is already a stack. Add a mixture of cornstarch and sugar to the cherry. We mix everything.

11. Spread the cherry filling on top of the slightly cooled base and distribute evenly.
Do not make my mistake and do not lay out the cherries at the very sides of the form, because during baking they burn and leave ugly streaks.
Sprinkle the top of the cherry with streusel.

12. We put the pie in the oven preheated to 180 degrees for about 35 minutes. Oven mode top+bottom.

Remove the cooled cake from the mold and serve.
The pie tasted just amazing. It harmoniously combines sweet biscuit, sour cherry and crispy streusel.
