While capelin is thawed, it is necessary to prepare the brine for it. The proportions are as follows: 1 kg of capelin taking 1 liter of water. Pour water into a saucepan, add salt - 2 tablespoons of the same amount of vegetable oil and spices.

Of spices I use one or two bay leaves, 3-5 buds of cloves, half a teaspoon of black pepper, and 5-7 peas allspice. You can add spices and a different number depending on your taste.

Once the brine boils, wait for 1-2 minutes until it is boiled, and then remove from heat. Let cool brine, it should be cold or at room temperature.

When thawed capelin, fill it ostyvshim brine. The fish must be laid so that the brine covered her completely. Capacity remove the cover with a lid and refrigerate. After 5-6 hours of capelin will be ready.

During this time she received salted. And if you want to make it more salty, then it is necessary to hold longer in the brine.

Once the taste, or rather the salinity, the fish you will have to arrange - pull it out of the brine, because the longer it will lie there, the more salt will taste.
