Salad appetizer of zucchini, aka sauce "Uncle Bens," for the winter

I share with you a time-tested recipe. As a salad, this blank, we almost did not eat.

She's going as the best sauce for pasta, meat, toppings for pizza.

Ingredients:

2.5 kg of tomatoes
2 kg zucchini
1 kg of red peppers
1 cup vegetable oil
200 gr. garlic
200 gr. Sahara
100 ml of 9% vinegar
2-2.5 art. l. salt

Preparation:

1. Zucchini sauce needs young. Older squash will not go, because they are more dense.

Important! Set the weight of all products already prepared and purified form.

Cut the zucchini into small cubes or grate. Sometimes I skip them through a meat grinder, then the mass looks more like a sauce becomes.

2. Tomatoes Wash, cut in half and chop the blender or meat grinder.

3. Garlic clean and skip through the press.

4. Red bell pepper cleaned of seeds, wash and cut into thin strips first. Then most small cubes, chop what happens.

5. In a pan with a thick bottom pour vegetable oil.

Put zucchini, garlic and pour all the sauce from tomatoes. Mass of salt, add sugar and stir.

Simmer all for 30 minutes after boiling.

6. Pour in the tomato and squash a lot of pepper and pour vinegar.

7. The mixture was brought to a boil, then cook for 20 minutes. Spices and condiments - upon request.

8. Transfer to a sterile, cans and hot roll.

To turn the cooling banks and wrap a blanket or quilt.
