Pepper stuffed eggplants in winter

Ingredients:

3 kg eggplant
3 heads of garlic
3 pod hot pepper
green beam (celery, parsley, dill)

For the marinade:

2 cups water

1 cup tomato juice
1 cup vinegar 6%
1 cup of sugarĀ 
1 cup vegetable oil
1 tablespoon salt
1 h. l. peas allspice
5 pieces. leafs

Preparation:

1. Pepper Wash. Cut off the top and remove the seeds and blanch in boiling water for 3-4 minutes.

2. Eggplant wash and cut along strips 0.5 cm thick, salt and leave for 2 hours for removal of bitterness.

3. Eggplant overcome the salt and fry until golden brown. Fried eggplant immediately spread on a cloth to unabsorbed excess oil during frying.

3. Prepare a mixture of pepper, garlic and herbs.

8. Cover jars with lids and sterilize 30 minutes.
