It can be prepared in many ways traditional, and a favorite salad. And you've tried?

Herring in our house is very popular: with potatoes or salad, she loved no matter what.
For many years the salad "under a fur coat" cook the traditional way.
But recently I tried a slight variation in a cafe and decided to repeat at home - it was too good a form of presentation.

Herring under a fur coat with a green garlic sauce

Ingredients:

400 gr. salted herring fillets
medium onion (preferably salad)
2 pcs. beets
1 PC. carrots average 
3-4 pieces. potato 
3 eggs 
250 gr. mayonnaise

For the sauce:

6 tablespoons. l. vegetable oil
3 garlic cloves
bunch of dill
parsley and basil
salt

Preparation:

1. Salad served portions. Therefore, for convenience, we will need garnirnoe ring. It can be served on a platter.
Boil the beets, carrots and potatoes.
2. Onion cut into thin half-rings.
3. Herring cut into medium-sized pieces.
4. Set ring on a plate, the first layer should be laid herring. On top of the onions.
5. Then a layer on a coarse grater grated carrots and potatoes.


6. The top - a beet.
7. Remove ring with salad.
8. On top of the beets to put mayonnaise and sprinkle with grated on a fine grater yolk (you can use and also proteins).
9. For the sauce in the blender bowl to lay all the necessary ingredients. Beat the sauce and pour over salad or file a gravy boat.

Herring under a fur coat with black olives

Ingredients:

300 gr. salted herring (fillet) 
1 jar of olives, pitted
bulb onions 
4 things. potatoes 
1 PC. big carrot 
2 pcs. large beets 
mayonnaise - to taste
salt 

Preparation:

1. This salad recipe is very similar to the traditional. The only difference - is olives.
They are cut into small cubes and stacked layer between herring and eggs.
That is: potatoes, onions, herring, olives, eggs, carrots and beets.
2. Lettuce decorate beet slices and olives.

Dressed Herring with beetroot mousse

Ingredients:

300 gr. salted herring
2 beet boiled
2 boiled potatoes
2 boiled carrots
2 eggs
1 tbsp. l. lemon juice
mayonnaise
salt
green onion
gelatin
coriander

Preparation:

1. Egg grate.
2. Potatoes cut into small cubes. Carrot chop similarly.
3. Herring also cut into small cubes. The herring add chopped green onion and mix well.
4. Beets cut into pieces.
5. Soak sachet gelatin in cold water for 5 minutes, then drain. Melt gelatin at low heat while stirring constantly, to boil not lead. Once dissolved, immediately remove from heat and cool.
6. Prepare mousse: beet put into a blender, 100 g of mayonnaise, coriander and lemon juice, add gelatin. All whisk blender until smooth.
7. In the form put herring salad and vegetables layers: potatoes, herring, carrots, eggs. Layers of grease with mayonnaise.
8. Pour on top of all beaten beetroot mousse. Put the salad in the refrigerator overnight.

Historical reference:
Very interesting history of the emergence of the name "Herring under a fur coat." Salad came in 1918, when in restaurants now and then flashed the political debate, the transition to a fight.
Resourceful chef Aristarchus Prokoptsev prepared reconciling dish "and the decline of chauvinism - and fight anathema", abbreviated as "S. W. B. A.".

Potato farmers symbolized, herring - workers, and beets - revolution. Over time, the history of the recipe, "Herring under a fur coat" was forgotten, and the name has stuck.
