Preparation:
1. Red fish cut into slices.
2. Mix the salt and sugar.
3. Season the mixture of salt and sugar, fish.
4. Put in a glass, or any other non-metallic bowl. Cover with a lid or plastic wrap to tighten the top.
5. Remove the jar in the refrigerator for 12 hours.
