Salad with eggplant, which you can cook almost every day. It does not bother. Eggplant tastes like pickled and preparing this salad is not more than 20 minutes. I do not think anyone surprised by this simple recipe, but I recommend to all those who have not tried it. Fast, simple, beautiful and delicious!
In the water adding salt and bay leaf. I bring to a boil and boiled for eggplant about 10 minutes.
Then eggplant wring out using two plates.
I cleanse them from the skin. Sliced. Cut can be different - can be diced or here as I am.
Now tomatoes. They are cut too shallow. Add the tomatoes to the eggplant, cut into half rings onion, Salts and dressed salad with fragrant oil. I usually use sunflower.
