Seasonal salad with eggplant

This salad last year appreciated by all my family. And this year, of course, I decided to repeat the success. Besides its main ingredients are seasonal vegetables, which are now very affordable.

Let's start with eggplant, because they require heat treatment, and it takes time. Eggplants should be cleaned, cut into small cubes and fry in a pan until cooked in a small amount of vegetable oil.

While fried vegetables, you can start preparing the remaining ingredients. Bulgarian pepper should be cut into small cubes, approximately as eggplant.

Further, sliced ​​cheese and eggs into small cubes. Cooled eggplant and prepared ingredients are combined in a salad bowl.

Also in this salad is added sweet red onions. But I did not have such a hand, so I marinated a normal bulb thinly sliced ​​onions in vinegar for a while.

We mix well and salad mayonnaise, preferably Pet. It is very tasty and quite satisfying salad, be sure to try.

Ingredients: 2 pieces eggplant, pepper 1-2 pieces, onion sweet pieces 1, 2-3 pcs boiled eggs, 100 grams of cheese, mayonnaise 80 grams
