With the onset of the long-awaited summer, I want to share with you a recipe for homemade bread kvass. This is our long-time proven family recipe. What could be better than vigorous kvass in the summer heat - and you can quench your thirst and make okroshka.

INGREDIENTS
per 4 liters
3.5 liters of boiled water
rye bread slices 8-10
3 tablespoons sugar
raisins 1 tsp
1 tablespoon yeast or ( dry yeast 1/2 tsp)
Recipe homemade kvass
You can prepare a drink with yeast, but the taste is different. I'm making a real brew on sourdough from rye flour. Why bread, because it is used for baking rye bread.

LEAVEN
Day 1 - 30 g of rye flour + 30 g water
2nd day - half to remove and add 30 g of rye flour + 30 g of water
3rd day - half clean and add 30 g of rye flour + 30 g of water
4th day - half clean and add 30 g of rye flour + 30 g of water
Day 5 - half clean and add 30 g of rye flour + 30 g of water
Day 6 - can be used, but it is better to hold 7 days.
Preparation of kvass
I do kvass in 4 liter jar to receive the output of about 3 liters (two 1.5 L bottles).
Pour into a jar half of the water, it can be warm, but should not be hot.
Add the sugar, raisins, crackers and a spoon sourdough.
Mix well.
Add the water, leaving an empty space at the top 2-3 cm for fermentation.
Loosely cover the jar and put into a warm place.
fermentation time depends on the ambient temperature, 1.5 - 2 days (in cold weather 3 days maximum).
When the yeast starts to play - the bread will rise.
All the bread should not fall to the bottom, if it happened - so brew prokis.
Ready brew strain through 2-3 layers of cheesecloth.
Add sugar to taste, about 1 tbsp per liter.
After straining brew better for a day put into the refrigerator for ripening.
CONTINUED infinite loop
Separate the remaining half of bread for the next batch.
This will be the next leaven.
The second half to throw away and wash the jar.
Knead the remaining half of bread, add water, raisins, sugar, etc.
So you are always with kvass!
