Fried eggplant with egg and onion. These are simple to prepare, but very tasty. Eggplant in combination with fried onions and garlic are similar in taste to the meat, and a little something even mushrooms.
INGREDIENTS
- Eggplant - 3-4 pieces. (Weight of treated eggplant 600gr)

- In a bowl break 3 eggs add black pepper to taste, half tsp salt. And whisk whisk or fork. Eggplant peel and we shall cut into large cubes of 2-3 cm.
Put the eggplant in egg and mix. Harvesting in the refrigerator for 1 hour or 3-4, and you can leave at night and eggplant. It will be even tastier. To the eggs soaked in eggplant evenly, it is sometimes necessary to mix.

And fry eggplant until golden brown on all sides. Occasionally stir. Add the fried onions. Crush 2-3 garlic cloves and add to eggplant. Put the parsley. All the mix. Add 1 tbsp mayonnaise or sour cream. Try on salt, even if you want to add. Stir and remove from heat.
