I want to share a simple recipe for a hearty beetroot soup. Not to be confused with summer, cold soup - beetroot!
Traditional Russian beetroot soup is a bright, rich in color and aroma vegetable soup.
The classic dish is served in two versions: cold or hot.
The cold version is prepared on the basis of beet broth, kefir, kvass or mineral water. Such a soup will refresh in the heat and give strength in the sultry summer.
But hot beetroot is an excellent warming first course for fall or winter. Spring is also good, as it perfectly energizes vegetables with vitamins and energy.
We're going to cook hot beetroot! You can make it lean with beet broth, or with any meat.
Ingredients:
1 liter of broth (vegetable or meat)
onion
4 medium burgundy beets
3 medium potatoes
1 tbsp. l. tomato paste
dill and parsley
vegetable oil
salt
pepper
sour cream
lemon for serving (you can 1 tsp. l. vinegar 6%)
Preparation:
1. Prepare broth. Remove meat or vegetables from it. And strain the broth and boil.
2. Wash, peel and dice the potatoes. Place the potatoes in the boiling broth. Cook for 15 minutes.
3. Peel and chop the onions into small pieces. Also prepare the beets - peel and grate on a medium grater.
4. Saute the onion in vegetable oil for 2-3 minutes, then add the beets to it and simmer for 5-7 minutes over low heat.
5. Add tomato paste and juice of half a lemon to the frying, or 1 tsp. l. vinegar. Mix everything. Warm up for another 10 minutes.
6. Transfer the contents of the pan to a bowl with broth and potatoes. Season with salt and pepper to taste and bring to a boil.
7. Cook the beetroot on low heat for 10 minutes. Optionally, add parsley root, parsnip or celery to the soup.
8. Pour the finished soup into bowls, garnish with fresh parsley and dill.
Be sure to serve with sour cream.
Advice:
- pieces of boiled meat can be added to the beetroot
- a few prunes will give the beetroot an interesting smoky taste
- this beetroot can also be served cold
