Sweet Bulgarian pepper pleases us all year round. And only in the summer season, it is affordable for everyone, but someone has grown his own, in the garden.
I will tell you what to make of pepper for the winter, how to save it in order to enjoy your reserves and resourcefulness in winter.
Let's start with conservation.
Bulgarian pepper (red) in tomato with garlic (not lecho!)
Ingredients:
3 kg of red bell pepper
1 liter tomato juice or a mixture of tomato paste and water (mashed tomatoes)
100 g garlic (2-3 heads)
1 cup vegetable oil
0.5 cups vinegar 9%
70 gr. salt
0.5 cups sugar
1 hot pepper pod
celery
Bay leaf
allspice
How to cook:
1. Wash sweet pepper, peel from seeds, cut into 2-4 parts.
Grind hot peppers in a blender or meat grinder in a place with seeds.
3. Chop the garlic into large pieces or slices.
4. Green celery can be substituted for parsley. Rinse, chop.
5. Boil tomato juice, add hot pepper first, then garlic and herbs. Pour in vegetable oil, add salt and sugar.
6. Put sweet bell pepper in boiling sauce, mix. Season with allspice and bay leaves.
7. Simmer on low heat for 5-7 minutes. And immediately put the boiling pepper in hot sterilized jars, pour the sauce and roll up with boiled lids.
8. Turn the lid upside down, cover with a blanket and leave to cool completely.

Bell pepper in honey filling
Ingredients:
3 kg of sweet colorful bell pepper
200 gr. honey
70 ml water
100 ml vinegar 9%
100 ml vegetable oil
100 g salt
5 bay leaves
15 allspice peas
head of garlic
How to cook:
1. Prepare the marinade - pour oil into the water, bite, add bay leaves and peas, as well as salt. Boil.
2. Peel the bell peppers from the seeds and cut into strips or halves.
3. Put all the pepper and honey in the boiling marinade. Reduce heat and simmer for 7-10 minutes.
4. First spread the pepper in prepared sterile jars, layering with garlic passed through a press.
5. Bring the marinade without pepper to a boil and pour pepper in jars with it.
6. Tighten with boiled lids, cool under a blanket.
As you can see, peppers can be pickled, salted, frozen, stuffed and covered with honey. And how to use all this wealth in winter is up to the hostess.
