Baker's recipe for a very successful yeast dough on kefir

All baked goods are fluffy, tender, directly airy, like a fluff. Products do not settle or wrinkle.

Important!
Baked pies with various fillings are especially good from this dough. For example, with meat, cabbage or apples.

You can use absolutely any filling you like. Just one tip - make the filling thinner by adding cold water or milk to it.

Ingredients:

800 gr. flour
0.5 l of kefir
2 eggs
10 gr. dry yeast
0.5 tsp l. salt
1.5 tbsp. l. Sahara
3 tbsp. l. refined vegetable oil

How to cook:

1. Sift flour three times! Add yeast and salt at the end.

2. Heat kefir until warm.

It is important not to overheat it, otherwise the yeast will not work. In cold kefir, they will be activated for a very long time.
Therefore, it is warm - about 30-33 degrees.

3. Pour warm kefir into a bowl of flour. Add sugar, vegetable oil and break eggs straight into it.

You don't need to whip them up beforehand. In bakeries, everything is done in one vat and the machine kneads the dough.
You can do this in a mixer or in a bread maker, just do not use a blender with knives, it is a bad helper for this.

4. Start kneading the dough, first with a spoon, then with your hands. The dough is sticky and that's okay! You don't need to add flour.

5. Grease a large bowl or saucepan with high sides with vegetable oil and place our dough in the bowl.

Important! The wider the bowl or saucepan, the longer and worse the dough will rise. And the dishes are deep, slightly narrow and with high walls are the best assistant in this matter.

If the flour and yeast are fresh, of good quality and the kefir was warm, then this dough will increase 2.5-3 times.

6. Cover the dish with a towel and leave in a warm place for 1 hour. After 50-60 minutes, you will have a very fluffy kefir pie dough.

7. Put the finished dough on a table or board, add a little flour and knead it with warm dry hands. Cut immediately into the desired pieces and ...

And then what your soul wants out of it and make: buns, pies, braids, etc.

Just change the fillings, everything will be incredibly tasty and aromatic. And the dough will turn out wonderfully well, that's for sure. Proven many times!
