Ossetian pies: so different, appetizing and delicious

Fillings can be anything, but the best stuff is with beet tops and cheese or meat. The cheeses are good too. But first things first.

Traditional Ossetian pies are a real delight to taste. Fragrant, hearty, delicious and easy to prepare.

Ingredients for the dough:

0.5 kg flour
380-400 ml warm water
1 bag of dry yeast
40 ml vegetable oil
2 pinches of salt
0.5 tsp l. Sahara

For the beet tops filling:

2 bunches of beet tops (only leaves without stems)
150-200 gr. Ossetian cheese or any pickled
salt
ground pepper

For the cheese filling:

300 gr. Ossetian cheese or any other (not necessarily pickled)
optional herbs and garlic

For filling with meat:

450-500 gr. minced meat (beef or poultry)
0.5 pod of hot pepper
2 onions
100 g cheese
salt
pepper

How to cook:

1. You need to start with the basics - with the test. Dissolve sugar and yeast in warm water. Mix and leave for 10 minutes to activate the yeast.

Sift flour, add salt, mix. Pour the suitable yeast into the flour and start kneading the dough. In three passes, pour vegetable oil into the dough and knead well.

Put the dough in a bowl, cover the top with cling film or a towel and leave in a warm place for 1 hour.

2. Now the fillings.
The simplest is cheese. It needs to be grated or kneaded with a fork, if it is something like cheese.
Add chopped fresh herbs (parsley, cilantro) and a clove of garlic to the cheese filling, if desired, but this is not necessary. Only cheese.

If it is dry, then you can pour in 1-2 tbsp. l. melted butter.

Tops filling: Sort the beet tops, remove all the stems, rinse and dry on a towel. Then chop into strips and mix with crushed or grated cheese. Add salt and pepper to taste.

Meat: add grated onion (or meat grinder / blender), chopped hot pepper, cheese, salt and ground black pepper to the minced meat.

3. Divide the finished dough into 3 parts - three pies will come out of it. And each filling is designed for 3 pies.

If you are planning more pies or with all three fillings, then make three servings of dough at once.

Any of the fillings presented above can also be divided into three parts.

4. Sprinkle the work surface with flour and roll out a small cake from a piece of dough. Put the filling in the center of the cake and collect the edges at the top with a bag. Like this.

Leave on for 1-2 minutes and then begin to gently knead the tortilla to the sides, forming a thin and round cake.

5. Take a mold or frying pan with a removable handle and sprinkle with flour as well. Transfer the cake to the mold and stretch it slightly along the bottom so that it completely occupies it.

Make a hole for the steam to escape.

6. Bake pies at 250 degrees for 10-15 minutes. Not more!

Put the finished pies in a stack on a table, flat plate or wooden board, greasing liberally with melted butter.
