Therefore, a salad of boiled or baked beets with butter is allowed even for small children, and beet broth is the best substitute for sugary carbonated drinks.
How to cook:
Wash two or three medium beets with a deeply cut tail and top, cover with cold water and cook for 30 minutes. Then add more water and cook for another 30 minutes. You can repeat it again until the water boils off to the original volume. The broth will be dark, strong and thick.
You can add raisins or prunes to it. This will make the drink more interesting. Or turn it into jelly - strain the broth and add 1 tsp into it. l. starch dissolved in 1 glass of cold water. Heat up and add sugar to taste.
And in the heat, the broth can be replaced with beet kvass. This is a very refreshing, delicious and incredibly healthy drink for the summer.
How to make beet kvass?
Ingredients:
0.5 kg of beets
50 gr. rye bread crumbs
1 liter of water
2 tbsp. l. Sahara
How to cook:
1. Put raw peeled beets grated on the bottom of a clean 2 liter glass jar. Top with sugar and rye crackers.
2. Pour cold boiled water. Exactly 1 liter, as you need to leave space at the top of the fermentation jar.
3. Cover the jar with gauze and leave at room temperature for 3-4 days.
4. Strain the finished kvass and refrigerate for 8-12 hours.
Use the rest of the beetroot-bread grounds as starter.
