And today I want to introduce you to the recipe for eggplant pancakes with cheese!

This recipe was shared with me by subscriber Oksana. As Oksana said - I came up with what was at home.

✅ You will need the following products for 5-6 pieces:

  • a small eggplant - I have 180 g,
  • a small tuber of young potatoes - I have 150 g,
  • mozzarella (you can use Adyghe cheese, feta cheese) - 80 g,
  • whole grain flour 2 tbsp (I have wheat flour = 30 g),
  • soft cottage cheese - 2 tablespoons (or sour cream, natural yogurt - I got 95 g),
  • salt, black pepper, dry garlic, and your favorite dry herbs. I added basil and a pinch of hops-suneli
  • a drop of cooking oil (no more than 2-3 g).

✅Cooking.

Eggplant and potatoes must be grated. Squeeze out the juice.

I separately slightly added the grated eggplant, left it for a few minutes and then squeezed out the juice.

We also rub the cheese on a coarse grater.

Mix eggplant, potatoes, soft cottage cheese, flour, cheese and spices. Do not forget that we have already slightly salted the eggplant.

Preheat the pan, grease with a drop of oil.

We form the pancakes (I shaped them with my hands) and fry on both sides.

Then we reduce the heat and bring it to readiness under the lid, sometimes turning it over.

Can be served with sauce.

The sauce Oksana suggested: sour cream or soft cottage cheese, smoked paprika and dry garlic.

The sauce that I prepared for myself: sour cream, dill, dry garlic.
