The cake turned out to be toffee-flavored - so my family told me with pleasure, enjoying a piece of PP cake.

I needed the following test products:

  • 3 medium carrots - 290 g
  • whole grain rice flour - 100 g,
  • 3 chicken eggs,
  • date syrup - 20 g (you can take 20 g of dates),
  • 1/2 teaspoon cinnamon
  • 6 sachets of sweetener (1 sachet s / h = 1 g = 5 g sugar).
  • 1 teaspoon baking powder
  • a bag of vanilla - 1 g.

For the cream you will need:

  • a jar of cream cheese (I have a Hochland) - 140 g,
  • 100 g soft cottage cheese or yogurt,
  • 5 sachets of sweetener (1 sachet s / h = 1 g = 5 g sugar),
  • 1 g vanillin.

Cooking.

Rub the carrots on a fine grater.

Separate the whites from the yolks.

Combine carrots, yolks, date syrup, flour, baking powder, vanillin, sakhzam and mix everything well.

At first, the mass was a little dry, but as it was mixed, the carrots released more and more juice and the mass stirred well.

Beat the egg whites separately with a pinch of salt until firm peaks.

Gently combine the proteins with the casing layer, gradually adding the proteins to the carrot mixture and stirring them in.

Put the dough in a baking dish. I used an 18 cm silicone mold. Well, if you have a form of a smaller diameter (12-14), then it will be possible to cut the cake not into 2 parts, but into 3 parts.

We send to bake in the oven, preheated to 180 g for 30 minutes.

While the cake is baking, prepare the cream.

Stir curd cheese, soft cottage cheese, sweetener and vanillin.

Cool the finished cake a little, cut into 2 parts. It turns out to be cut into 3 parts - even better.

Lubricate each cake with cream and decorate as desired.

I poured 10 grams of date syrup and sprinkled literally 5 grams of pine nuts.

You don't even have to insist on the cake. Collected a cake - and you can brew tea and enjoy a delicious carrot cake.

KBZHU at the cake is very pleasant: K - 180, B - 7.4, F - 8, U - 19.
