I often boil potatoes for a side dish. And perhaps this is my favorite side dish. I don't know what could be tastier than boiled potatoes with lightly salted fish, for example. My potatoes always turn out to be very tasty, because I know a few secrets, and today I will share them.
Secret first
I cook potatoes over moderate heat, avoiding a strong boil. If the fire is strong and the bubbling is active, then the top layer of potatoes will be boiled and "crumble".
Second secret
I choose the same size potatoes so that the tubers are ready at the same time. For the same reason, I pour so much water that the potatoes are completely covered with water. If some part of the potato is not covered with water, then it takes longer to cook.
Secret third
I never salt water while cooking potatoes. In salt water, potatoes become denser and harder.
The fourth secret
But during cooking, I add something to improve the taste. Usually it is 2-3 cloves of garlic or a couple of dill sprigs. You can add a whole peeled onion head. I don't like to add pepper and bay leaves, because their aroma is too bright.
The fifth secret
As I wrote above, I do not salt potatoes. If I serve potatoes, for example, to a salted fish, then salt is completely useless here. And if necessary, I mix salt with melted butter and water the potatoes. I also sprinkle it with fresh herbs - dill or green onions.
