Store sauces and ketchups can now be skipped. I will tell you how to make delicious Kuban tomato sauce for the winter. Highly recommend cooking, the sauce is amazing!
Ingredients:
tomato
garlic
hot pepper
onion
salt
sugar
carnation
cinnamon
mustard
black peppercorns
vinegar
We need 2.1 kg of ripe tomatoes. Wash them thoroughly and immerse them in boiling water for 1 minute (blanch). Then we take out the tomatoes with a slotted spoon and immediately fill it with cold water.
After such a manipulation, the peel should burst on the tomatoes. We remove it, chop the tomatoes and put in a saucepan. As soon as the mass boils, add 2 tablespoons of sugar, as well as spices that need to be ground: 2 pieces of cloves, 2 pieces of black peppercorns, 1 piece of allspice, and a pinch of cinnamon.
Next, put 2-3 cloves of garlic and one small onion. Finely-finely chop the garlic and onion, or pass through a meat grinder.
Now simmer the tomato mixture over moderate heat, stirring occasionally. As soon as the mass is halved (boiled down), add another 4-5 tablespoons of sugar, and cook for 10-15 minutes.
5 minutes before cooking, put salt - 1 tablespoon and vinegar 6% - 170 ml. We do not pour in the vinegar all at once, but add in small portions, while stirring the sauce.
Put the hot tomato sauce in the jars and sterilize, covering with lids. We sterilize jars with a volume of 0.5 liters for 30 minutes, 1 liter - 50 minutes. Then we roll it up, turn it upside down and cool.
The output is 1 liter of sauce. Bon appetit, friends!
