This jam can be made from absolutely any berries. Strawberries, raspberries, currants, blackberries, wild strawberries, etc. will do. I made from strawberries the other day. This is not really a jam, because you don't need to cook anything, but it is very tasty and simple.
Preparation:
The main principle of cooking is that we should have everything cold, from the water in which my berries are in, and ending with cans. It is very important.
So, we take one kilogram of berries, sort them out, wash them and dry them on a towel or on a sieve - there should be no excess moisture. We wash the berries and sort through them well, earth, rotten parts, etc., should not get into the jam, because we have jam without any heat treatment, and if something "extra" gets in, it can turn sour and spoil.
Grind the berries with sugar or grind them to a puree using a blender, or pass them through a meat grinder - choose any method convenient for you. Sugar for 1 kg of berries will need 2 kg.
Leave the resulting mass at room temperature for 4-6 hours, stirring occasionally with a wooden spoon or spatula. The sugar should be completely dissolved, or almost all of it. If it is very hot in your kitchen, then put it in the refrigerator (you can at night).
We put cold jam in clean cold and dry jars, close with lids. We store the jam in a cool place (I have it in the refrigerator). The jam does not spoil, the taste of fresh berries is preserved. Delicious! Bon appetit, dear friends!
