A delicious, hearty vegetable and rice salad that was popular in the 90s. But today I also do it all the time, every year I roll up a few jars, because it's very tasty!
Ingredients:
Tomatoes
Sweet pepper
Onion
Rice
Carrot
Salt
Sugar
Vegetable oil
Greens
First, we need to cook 500 grams of rice until half cooked. Take any rice, I prefer to take round grain, I like it the most for this salad.
Then cut 3 kg tomato into medium cubes, chop 1 kg of onion into cubes, chop 1 kg of bell pepper. I also cut it into cubes.
Optionally, you can add 500 grams of carrots to this salad. Rub the carrots on the coarsest grater.
Now we put a large saucepan on the stove, pour 450-500 ml of vegetable oil and lay out all the vegetables. Add 2 tablespoons of top salt, 200 g of sugar and mix everything.
Simmer everything together, stirring with a wooden spatula, for 25 minutes. Then add rice to the vegetables. Also at this stage, you can add herbs to taste.
Cook for another 10 minutes. Then we put the hot salad in sterilized jars, roll up and wrap it up until it cools completely. The "Sated Winter" salad with rice is ready. Delicious, try it! Bon appetit, dear friends!
