I am telling you how I cook delicious caviar from green tomatoes for the winter. I know that many people don't use green tomatoes at all and just throw them away. And for me everything goes into business, from which I prepare salads and caviar. Today I am sharing a recipe for caviar.
Ingredients:
green tomatoes
carrot
onion
tomato sauce
salt
sugar
vegetable oil
greens
To prepare caviar, we need 600 grams of green tomatoes. We choose tomatoes without damage, there should be even, pretty tomatoes.
If the tomatoes have cracks, or they have fallen from a branch, then these go to my canned salads. Sometimes I can add one green tomato to the cabbage soup - it also turns out delicious.
But back to the preparation of caviar. Bake the tomatoes and 2 carrots in the oven until soft. Meanwhile, finely chop 2 onions and fry in vegetable oil.
As soon as the vegetables are baked, we pass them through a meat grinder. You can also use a blender and blend until smooth.
Transfer the resulting vegetable puree to a saucepan, add finely chopped greens (I take parsley), fried onions, then put 1.5 teaspoons of salt, 1 teaspoon of sugar, as well as 100 g of tomato sauce. You can take a store sauce, you can use tomato paste, but then you need to put it less, about 50 grams. I have homemade tomato sauce, I usually borax it.
Bring the mixture to a boil and place in jars. We cover them with lids and sterilize for 40-60 minutes, depending on the volume of the can. Then we roll it up and turn it upside down.
After the cans with caviar have cooled completely, we store them in a cool place. Very tasty! Bon appetit, friends!
