Usually in winter we don't cook salads with fresh vegetables as often as we would like. A poor assortment of vegetables in the store of questionable quality and taste. Therefore, in order to get all the necessary vitamins and fiber, we turn to seasonal vegetables such as beets, radishes, cabbage and carrots. Today I bring to your attention two simple but delicious carrot salads.
The first salad is the simplest, but thanks to the dressing it turns out to be very spicy and tasty. You only need 1-2 raw carrots, which you need to grate.
For the dressing, you need to mix just three ingredients: 2 tablespoons of olive oil, 1 tablespoon of soy sauce, and half a teaspoon of mustard with grains. Mix everything well and season the grated carrots.
I serve this salad with sesame seeds, which is also an additional source of calcium.
The second salad is already richer in ingredients, besides, it also looks very beautiful and bright. Carrots also need to be grated, 1-2 pieces of medium size.
A few green lettuce leaves need to be washed well and chopped. I cut the cucumber into strips using a special grater, but you can do with an ordinary knife.
You can also add red or green onions if desired. All ingredients must be mixed well in a salad bowl and seasoned.
For dressing, I only mix olive oil and soy sauce, no salt.
Garnish with sesame seeds when serving.
