"Unusual" salad: a simple recipe for a delicious chicken salad with Korean carrots and egg pancakes

Today I want to bring to your attention a recipe for an interesting, simple and delicious chicken salad with Korean carrots and egg pancakes.

The salad is moderately spicy, hearty - the ingredients go well with each other. And, for some reason, I'm sure that many will like it!

Cooking ingredients:

Boiled chicken breast - 300 g
Korean carrots - 250 g
Chicken eggs (raw) - 3 pcs.
Bulb onions - 1 pc.
Mayonnaise for salad dressing - 2-3 tbsp. l.

Let's move on to cooking ...

First of all, you need to put the chicken breast to cook. I cook it in salted water, with the addition 1 bay leaf and a few black peppercorns - the meat becomes aromatic. Although, chicken breast can not only be opened, but also baked in foil in the oven.

Then we cut the cooled meat into small cubes, or simply divide by fibers.

Cut the onion into half rings - you can leave it as it is, but I prefer to pickle it in vinegar water.

I put the onion in a bowl, pour in 2 tbsp. l. vinegar, boiling water and leave to marinate for a while.

Moving on to another ingredient - Korean-style carrots! You can use the store - it is sold in any supermarket, and significantly reduce the preparation time for the salad.

Or prepare it yourself, I'll tell you how I do it:

250 g peeled carrots rub on a "Korean" grater, add 1 hour l. sugar, 1/3 tsp l. salt and rub with hands until juice forms.

Next, squeeze out through the garlic press 3-4 cloves of garlic, add the grated coriander seeds (1/3 tsp. l.), Little ground black pepper, hot red pepper and fill in 50 ml hot vegetable oil (heat it up in a pan or microwave), stir.

Pour in last 1 incomplete Art. l. vinegar, mix again. In principle, Korean carrots are ready, but you need to wait a bit for them to marinate. Therefore, it is better to prepare it in advance.

Then we prepare egg pancakes - break the eggs into a bowl, add a pinch of salt, whisk with a whisk as if for an omelet.

Fry thin egg pancakes in a well-heated pan, greasing the pan with a little vegetable oil. It always turns out 3-4 pancakes.

Put the fried pancakes on top of each other, cut into four strips, and then into strips.

Putting all the ingredients in one bowl ...

Add mayonnaise for dressing, mix. Salad ready! Cook, taste, Bon appetit!
