The season of fresh vegetables has begun, and already some young cucumbers have appeared in the beds. So it's time to cook salads!

This vegetable is added to many salads, and you can also find such recipes on my channel.

Just a couple of months ago I was putting out a salad called "Pheasant", which includes cucumbers.

If you haven't seen this salad recipe yet, I'll leave a link to it at the very bottom of this article.

And today I want to offer you two favorite salads of my daughters, where cucumbers are the main ingredient! The recipes are very simple, but the salads are very tasty, I'm sure many will like them.

Ingredients for the first salad (I indicate the minimum, you can always increase the proportions):

Cucumbers - 1 pc. long
Chicken eggs (boiled) - 2 pcs.
Processed cheese - 1 pc.
Greens - any to taste
Salt, black pepper and sour cream for dressing

Ingredients for the second salad (also a minimum):

Cucumbers - 1 pc. long
Bulb onions - 1 pc. small
Garlic - 2 cloves
Dill
Mint
Salt, black pepper
A little lemon juice and natural yogurt (sour cream) for dressing

Let's get started ...

To prepare 1 salad cut cucumbers into small cubes, transfer to a salad bowl.

In the same way, we cut boiled eggs and a briquette of processed cheese.

We put them in a bowl with chopped cucumbers, add chopped herbs.

Salt, pepper, season with sour cream. All... Salad ready!

For the second salad cut the cucumbers into circles (small) or in halves / quarters (large).

Cut the onion into thin half rings, and if possible, use the sweetish purple onion.

We put everything in one bowl. Add chopped dill and chopped mint leaves... Yes Yes! It is mint! Just like in expensive restaurants... Mint in desserts, mint in meat sauce! I must say right away that the salad is of course spicy, but very so... refreshing! My eldest daughter makes this salad all the time while fresh mint grows in the garden (for some reason, mint does not grow at my house).

Next, peel and squeeze the garlic here through a press, add a little lemon juice, and season with natural yogurt or sour cream again. We mix. Salad ready! Cook, taste, Bon appetit!
