The season of fresh vegetables has come, so we are filling our diet with vitamins to a greater extent.

Some time ago I published several recipes fresh cucumber salads - which season is in full swing. Cooking these salads takes a minimum of time, but they turn out to be very tasty.

And today I want to invite you to cook a very tasty young zucchini appetizer. I learned this recipe several years ago, and now I always cook such an appetizer during the season of zucchini.

Cooking ingredients:

Young zucchini - 2 pcs.
Garlic - 3-4 cloves
Walnuts - 30 g
Lemon juice - 2 tsp l.
Greens - dill or parsley
Salt to taste
A little vegetable oil for frying and dressing

Let's get started ...

For such a snack, you need to take only young zucchini, with overripe ones it will not turn out so tasty. Wash the zucchini and cut into small cubes without peeling.

Pour a little vegetable oil into the pan, turn on the heat above average, lay the zucchini and fry them for several minutes, stirring constantly. Do not salt the zucchini yet, otherwise they will begin to release juice - and they will no longer be fried, but stewed - and there will be no crust. The zucchini should be browned. Then we reduce the fire to a minimum, cover the pan with a lid and fry for another 3-4 minutes. And only then add salt.

Meanwhile, we are preparing the dressing: pour 3-4 tablespoons of vegetable oil into a bowl, pour in lemon juice, squeeze the garlic through the garlic press, add finely chopped herbs and chopped walnuts, mix.

Put the fried zucchini from the pan into a bowl, pour in the dressing, mix. And cool it down. Try to cook such a snack at least once - it's inexpensive and very tasty, I'm sure you will like it! Cook, taste, Bon appetit!
