And today I want to bring to your attention a recipe delicious shortbread cake with jam - moreover, here you can use absolutely any the consistency of jam. Below I will tell you how I thicken the liquid jam to make such a cake so that it does not leak.

Cooking ingredients:

Butter - 130 g
Chicken eggs - 1 pc.
Sour cream - 2 tbsp. l.
Sugar - 4 tbsp. l.
Salt - 1/2 tsp l.
Baking powder - 1 tsp l.
Flour - 350 g
And any jam to your taste - 200 g

Let's start cooking ...

Sift flour into a bowl, then take chilled butter and grate it. Rub it into crumbs with our hands.

Then add all the remaining ingredients and knead the soft dough. We wrap the finished dough in plastic wrap and put it in the refrigerator for half an hour.

After half an hour, we take out the dough from the refrigerator, cut off a small part - put it to the side.

Put the remaining piece of dough on a sheet of parchment and roll it into a round layer, and it is not necessary that the edges are even.

Now we take some flat plate, with a diameter slightly smaller than the rolled dough, put it in the middle. Cut all the free dough around the plate into strips, up to 1 cm wide.

We remove the plate and twist the cut strips with a snail, and at the base we unfold and press down a little. And thus, we form the rim of the cake.

Put jam in the middle of the pie.

And now I'll tell you how I usually thickening liquid jam, for example, cherry or raspberry: I take a glass of jam, pour it into a bowl, add a tablespoon of semolina and leave it on the table for a while so that the semolina swells. Then I pour it into a saucepan and boil it a little. I really like this particular option - semolina is not felt at all. Although, there are other ways - for example, just boil the jam longer, or add starch.

Back to the pie ...

From the remaining small piece of dough, you can make a grid or some other type of decoration on the surface of the cake.

We transfer a sheet of parchment with a pie on a baking sheet, and send it to bake in the oven for 25-30 minutes at a temperature of 180 degrees. Cook, taste, Bon appetit!
