Summer is over, autumn has come - now instead of light vegetable salads, I want to pamper myself with delicious hot tea with aromatic homemade cakes!

And today I want to tell you how I make from the most ordinary products you can say "correct" and fluffy pancakes. There are no special secrets in the recipe itself, but there are small nuances in the preparation of the dough itself - it seems to be a trifle, but the airiness of the finished pancakes depends on this.

The pancakes cook very quickly, they turn out fluffy and do not settle.

And at the end of this publication, I will leave a few more links to other baking recipes that I published a little earlier. Look - you might want to rewrite something in your cookbook!

Ingredients for making lush pancakes:

Chicken eggs - 1 pc.
Kefir - 1 glass (200 ml)
Sugar - 2-3 tbsp. l.
Soda -1/2 tsp l.
Salt - a pinch
Vanillin optional
Flour - 280-300 g
Vegetable oil for frying - about 3-4 tbsp. l.

Let's start cooking ...

Break the egg into a bowl, add a few tablespoons of sugar, a pinch of salt and vanillin if desired.

Beat with a mixer or just a whisk.

Now it's the turn to kefir - you need to add warm kefir to the dough, and not just at room temperature, but slightly warmed up. Pour it into a bowl of egg mixture and stir.

Now add half a teaspoon of baking soda to this mixture and mix quickly. But there is no need to wait for the violent reaction of soda with kefir to begin !!!

Sift the flour immediately and stir.

The "correct" consistency of the finished dough should be sufficiently thick and stretchy. If it is stirred with a spatula and collected from the sides of the bowl towards the middle, it does not spread. We leave the dough alone for literally 5 minutes, and do not disturb it further - do not stir it.

After 5 minutes, we begin to fry the pancakes. Pour a little vegetable oil into the pan, heat it up and then gently spread the dough with a spoon - as I said once again, without disturbing it, but carefully collecting it from the walls. On both sides over medium heat, until a beautiful golden brown crust is formed. Cook, taste, Enjoy your tea!
